Who else is totally obsessed with potatoes?
I’m not exaggerating when I say that I can’t remember the last day when I didn’t eat potatoes lol, they are just such a staple carb for me. Today I made some classic hasslebacks that I stuffed with garlic cloves during the roasting process and roasted them in the oven for around 40 minutes. Served with mushrooms, tomatoes, edamame, and spinach, plus some ketchup that I added after the photo (I am actually a self-confessed queen of sauces hahah I always drown my meals in ketchup, hummus, vegan mayo etc but they just aren’t the most photogenic hence you never see them atop my bowls). I finished an essay this morning, then went to a lecture and had quite a chilled out rest of the day. Hope you’re all having an amazing start to the week! 💚
