On a normal week I usually try and prep 10 meals on Sundays, 5 for breakfast, 5 for lunch. One for each day of the workweek. On the weekends I usually will experiment with new recipes or just fend for myself those days. I’m often asked on how long to keep meals in the fridge. I don’t recommend going longer than 5 days. 3 days is best to maintain as much flavor and texture as possible but having to cook in the middle of the week isn’t worth the minor quality improvements to me. The scrambled eggs on the breakfast side will be fine throughout the week as long as you don’t over cook them on your cooking day. I’d say 7/10 people over cook their scrambled eggs as it is and you have to remember that you’re cooking them a 2nd time in the microwave. .

Brazilian Stroganoff was one of my go to Meals when I lived in São Paulo. It’s very different tasting than a lot of other dishes I’ve eaten and I enjoy the change of pace. I use plain Greek yogurt in the sauce which isn’t traditionally used but it is definitely the healthier choice. Using Greek yogurt is an easy way to lessen the calorie load of certain meals that call for a cream sauce. I prefer to make a bit extra of the cream sauce in this meal because it is nice to add a little over the broccoli because, you know, it’s gross by itself. .
