Red Snapper Fish Tacos. I’m trying to eat more fish this year so that means I’m probably going to be eating fish tacos 52 times this year. I am not a huge fan of fish, mainly because I live in Missouri and obviously there is no ocean within a day’s journey. Fresh water fish blow dude and fresh water fish from the mud rivers of Missouri?? Goodbye. If I’m going to eat freshwater fish it better be salmon. Saltwater fish is way better but being stuck in the guts of America everything we get is frozen and not fresh. When I pick out fish at the store I try and go for the freshest looking, wild caught options. .

This is not a meal prep dish, just a standard meal. Some of you guys have asked me for more fish recipes for meal prep and the answer is no, absolutely not. Meal prepped fish makes me want to vomit and I will not be held responsible for you bringing fish to work and becoming the office pariah. It’s too delicate, will stink up your fridge/house/work, and it doesn’t last long enough. That is why there is no fish in my meal prepped dishes. Plus all of the reasons above 😇

This dish, like just about any cooking, is not an exact science. I don’t measure stuff when I’m just throwing together meals. Just get close and you’ll be fine. Here’s the recipe. It made 4 Tacos. 222 Cals each
Ingredients:

1/2lb red snapper
Blackening seasoning (roughly 1/4-1/2 tsp of chili powder, salt, pepper, cumin, and cayenne mixed together)
1 tbsp olive oil
1/4 cup plain Greek yogurt
1 tsp Adobo sauce
Lime juice
Mango
Jalapeño
Cilantro
Red onion
1 tbsp Cotija cheese
Avocado
Corn tortilla shells

Preparation
-Preheat the oven to 400F. -Mix the spices together and drizzle olive oil over the fish. Rub seasoning on the flesh. -Bake until it’s done. I don’t know how long. I never time it because it doesn’t matter. It’s done when it flakes
-Cut up the mango, jalapeño, cilantro, and red onion into a salsa. -Mix the yogurt with adobo sauce and lime juice. -construct Tacos. Top with Cotija cheese, avocado, and salsa
