Ropa Vieja with Rice and Beans

Ropa Vieja with Rice and Beans   😎
.
Story time.
This dish is one of my favorites because it reminds me of the food I ate when I lived in São Paulo. It was in São Paulo that I discovered how much I love food. The first 3 weeks I lived in Brazil I lost 14 pounds because I was trying to save money and I didn’t have a kitchen. I ate mostly ham and cheese. It was miserable, i was sick of the food in 3 days. I finally decided to say screw it and start eating like a normal person again and I’m so glad I did. Some of my favorite memories are from eating in Brazil. One time we decided we were going to grill some meat so we went to the store, got some calebresa (sausage), a loaf of bread, garlic, butter, and a few limes. We went to the top of our apartment building overlooking the neighborhood and built a grill from a cinder block and a deconstructed clothes hanger. We minced the garlic and threw it on a piece of sliced, buttered bread and grilled the bread and sausage. Then we put the sausage on a piece of the grilled garlic bread and squeezed fresh lime juice on top. I don’t know if it was the food alone that made it so good or the process we took to cook it, but that simple meal was so flavorful and incredible that I can still taste it today and it is one of my best memories from my time in Brazil. Food is so much more than just eating. It doesn’t have to be extravagant or prepared with expert techniques. Sometimes all you need is a rooftop, a cinderblock, a clothes hanger, and some sausage to create an unforgettable food experience. The author Michael Pollan talks a lot about how eating is a community event. It’s a time where we are supposed to talk with friends and manifest camaraderie. Our fast paced lives and screens are killing this and I think it plays a role in the obesity crisis. Preparing high quality food is not only good for your body but also for your soul. This is why I am so against plain chicken, rice and broccoli in meal prepping. I’m curious to know, if you made it this far what is your favorite food experience you’ve ever had? .
