Raspberry Chocolate Chip Dutch Baby. Here is a super easy sweet snack you can use for a dessert post dinner treat. All you have to do is throw the ingredients in a blender and pour into a pan to bake.
This reminded me of a giant poffertje which I guess makes sense because it’s essentially the same recipe just cooked differently. Try it out.
INGREDIENTS
20g (3-4 tbsp) oat flour
4g (1 tbsp) tapioca flour
2g (1/2 tsp) baking powder
1 egg
2g (1/2 tsp) stevia
2mL (1/2 tsp) vanilla
60mL (1/4 cup) skim milk
35g (1/4 cup) frozen raspberries
8g (1 tbsp) mini chocolate chips
2g (1 tsp) powdered sugar
PREP
1. Preheat oven to 425F.
2. Mix everything except raspberries, chocolate chips, and powdered sugar in a blender.
3. Spray a 6” cast iron pan with oil and pour in batter. You can add the raspberries and chocolate chips before or after baking. Your call.
4. Bake for 12-15 minutes or until it has set.

❓Can I use almond milk?
❗️Use whatever milk you want. It will turn out fine.
❓What if I don’t have a cast iron pan?
❗️Then use a pan that isn’t cast iron that can go in the oven. Pretty simple when you take a minute to think.
❓Can I use regular flour?
❗️Yes.
❓What can I swap the stevia for?
❗️Take 4 seconds and think about this. You know stevia is a sweetener. What could stevia possibly be taking the place of in this recipe? There’s your answer.
❓I don’t have any tapioca flour.
❗️Cornstarch will probably be fine. You might even be able to add an equal amount of oat flour. It will just lose a bit of chewiness.
❓I don’t like raspberries/chocolate, what can I use instead?
❗️Swap the toppings out for whatever you do like and that goes for every recipe in the history of the world. If something is simply sitting on top of a baked good it’s so painfully obvious you can omit or swap it. Like always, problem solve.
