Cinnamon Roll Flavored Oat Bites. I can’t call this a cinnamon roll because it’s not. There is no rolling that occurs. It tastes similar to a cinnamon roll but the texture is obviously different as there is no layers. Only one normal pillsbury roll has 300+ calories so 480 cals for all 12 of these is pretty solid if you ask me
INGREDIENTS
60g oat flour (3/4 cup whole oats)
120g non fat Greek yogurt (1/2 cup)
50g liquid egg whites (3 tbsp/1 large)
4mL vanilla (1 tsp)
2g baking soda (1/2 tsp)
2g stevia (1/2 tsp/1 packet)
FOR FILLING
4g cinnamon (1 tsp)
25g sugar (2 tbsp)
20g plain Greek yogurt (4 tsp)
FOR ICING
45g vanilla Greek yogurt (3 tbsp)
5g vanilla whey (1-2 tsp)
1g stevia
8mL water (2 tsp)
PREP
1. Preheat oven to 350F.
2. Mix the dry dough ingredients together then add in yogurt, vanilla, and eggs.
3. Mix the filling ingredients together.
4. Spray a mini muffin tin with oil. Divide the dough in half. Fill 12 wells using half of the total mixture.
5. Divide half of the filling mix between the wells. Add the remaining dough over the top. and top with the rest of the filling mix. Use a toothpick to swirl the cinnamon filling into the dough.
6. Bake for 12-13 minutes or until a toothpick inserted comes out clean.
7. Mix the icing ingredients and drizzle over the top. It’s best to ice them when you eat them and not in advance.

❓Can I use regular flour?
❗️I guess. If you use regular flour you could probably just make real cinnamon rolls though because you have the gluten to keep them together.
❓Why is there stevia and sugar?
❗️Because I don’t like the way stevia tastes when it’s not mixed into a batter. It gives it a more authentic taste to use sugar. Use sugar for the whole thing if it really bothers you.
❓I don’t have vanilla Greek yogurt, can I use plain?
❗️Yes. The vanilla tastes more icing like because it’s already sweetened. Just buy a single serving tub of it. They are like 80 cents.
