Chunky Monkey Breakfast Cookies 😍 Because why not start the week off with cookies for breakfast? 😉 Ready in less than 15 minutes and made with only 5 ingredients 🤗 You can easily make them GF with gluten free oats too 👌🏻 -⠀

I was going to make oatmeal cups for breakfast and to have throughout the week but turned them into cookies instead 😎 Quicker to make and the texture was 💯 Plus chocolate + banana is one of the best combos out there 🙌🏻 Not a ton of sugar in these- just the sugar from the banana and some maple syrup 👌🏻 Eli tried to take the whole batch with him to school today but I compromised with sending him 3 😜 Can’t blame him though because the melty chocolate chips were 🤤 Getting back in the swing of things today- grocery shopping, recipe testing, catching up on emails, and a few phone calls this afternoon! Feels good to be back in a routine 🤗 Happy Monday!! -⠀

breakfast details 👉🏻 (makes 10-12 cookies) I had two of these babies for breakfast with some Greek yogurt 👌🏻 Okay recipe: in a bowl combine⠀
1 cup rolled oats (can be GF) ⠀
1 1/2 mashed banana ⠀
1/3 cup cashew butter (I used @woodstockfoods) ⠀
2 tbsp maple syrup ⠀
Mix together with a spatula or wooden spoon. Then add in 1/4 cup chocolate chips. Bake at 350F for 12 minutes! Top with more chocolate chips if you’re into that 😉⠀
