I like to try cooking meals from all kinds of different cultures because it keeps things interesting and because it allows me to experiment with different flavors. One of my favorite things to do is to eat the local food of places I travel and then try and recreate those dishes into meal prep recipes. Unfortunately I haven’t had the opportunity to travel too much but you can find a few of my recipes on this page that have been inspired by my travels. There is a pulled pork and banana pudding recipe that was inspired by a restaurant in Nashville. The Brazilian Chicken Stroganoff recipe was inspired by a restaurant in São Paulo that I used to eat at after work. I find that these dishes are my favorite to prep because not only do they taste great but they also bring back memories of the first time I ate the meals. .
I’ve been making tacos so much recently that quite a few of you have asked me if I’m Mexican because I cook Latin food so often. The answer is no, I just like Latin food ?. I am white and Chamorro. The two dishes in this picture are two meals that I grew up eating. My grandma is from the island of Saipan and these two dishes are meals she would cook for us often. The left side is a dish called Pancit. It is a Filipino dish that is made with rice noodles, meat, and just about any vegetables you have on hand. The right side is a meal that is usually made with chicken legs but to make it meal prep friendly it has been altered. One thing to consider when cooking this dish for your preps is to make sure you give the sauce time to reduce. If you let it cook down, the pineapple juice will turn into a syrup and coat the chicken with tons of flavor. .
