Peanut Butter and Jelly Casein Waffle. These are a lifesaver for me on some of those nights where I’m craving bread. They are gluten free, as they are made from casein protein powder instead of any flour. .
Here is how to make these.
1 scoop casein protein (I use optimum nutrition)
1/4 cup of water
1 egg white
1/4 cup frozen berries
1 tsp maple syrup (optional)
1.5 Tbsp Powdered peanut butter (real is OBVIOUSLY fine, just more calories. Any other substitutes are fine as well)
1. Beat egg white until frothy. Add in 1/4 cup of water and the casein protein powder. Mix to incorporate.
2. Spray a preheated waffle iron and place the batter in the center. It will take around 3-4 minutes.
3. In a small saucepan, add the frozen fruit and break it down as it thaws. Add in 1 tsp maple syrup if you wish.
4. Top your waffle with peanut butter and the fruit.
Whey protein doesn’t work. You should use casein. Casein has a different protein structure than whey and when you cook casein it creates a much better texture. If you use whey it will either run out of the sides of your iron or create a dense, inedible waffle. I know I’m going to get questions about using whey, so for those of you reading this who had this question, know that I appreciate your ability to problem solve for yourself ?
