We had our first properly warm spring day today so of course my mum and I spent it in the sun, sitting on the beach and doing some last minute shopping before my departure back to uni on Sunday (for my last term of the year!), so I made something really simple and refreshing for dinner. This bowl features wholegrain rice noodles, butter beans cooked in turmeric, spinach, tomatoes, asparagus, mushrooms, peas and avocado, which I drizzled with tahini and lemon juice after the photo, also adding some salt and pepper. Colourful food just makes me happy, especially once it starts getting closer to summer! Hope you’re all having an incredible Thursday 💚
