Dinner tonight was as fast and easy as it was GARLICKY — lemon garlic ghee shrimp, sautéed garlic-parmesan cauliflower ‘rice,’ and cast iron-grilled asparagus 🍤🍋🌱. Add shrimp to pan, and sauté 3-4 minutes per side. Add 1-2 tablespoons of fresh lemon juice to the pan as the shrimp are finishing cooking and sprinkle with fresh parsley •• GARLIC-PARMESAN CAULIFLOWER ‘RICE’ 🍚: in a separate pan, heat 2 tablespoons @fourthandheart garlic ghee; add two garlic cloves (finely minced), and sauté – minute; add 2 cups cauliflower ‘rice’ and sauté for a minute. Season cauliflower rice with salt, pepper, and any additional seasonings you desire. Continue cooking 3-4 more minutes, until soft. Stir in 1/4 cup parmesan cheese •• CAST IRON-GRILLED ASPARAGUS 🌱: drizzle raw, trimmed asparagus with 1 teaspoon melted @fourthandheart garlic ghee and season with salt and pepper. Grill asparagus on a cast iron grill plate (or regular grill) 5-7 minutes, or until crisp tender.
