These CHIPOTLE SHRIMP MANGO STUFFED AVOCADOS were one of the easiest and most delicious meals I’ve made in a while. Paired with a side of spiralized cucumber salad and BAM lunch/dinner in 10 minutes! This was my lunch from over the weekend…you can check my actual lunch out in my stories…it did involve 🍤 😋 Made these with @marinadelreyfoods frozen wild caught Argentinian Red shrimp (I ALWAYS buys wild caught and these ones are my favorite. The taste and health benefits of wild caught is the way to go…cleaner and tastier…just how I like my food! I spent the morning at the doctors, my least fave…so home now getting work done and seeing my stepdad tonight! Hope you’re all having a fabulous Thursday!⠀

Deets: One avocado sliced in half and put removed, stuffed with arugula, mango chunks, tomatoes, cabbage, @marinadelreyfoods shrimp, boiled from frozen for about 5 minutes and tossed in some chipotle hot sauce, scallions and cilantro. Paired with spiralized cucumber with lime juice, salt, hemp seeds, red pepper flakes and tahini.⠀
