SPICED CUMIN CHIPOTLE LIME TURKEY TACOS with MANGO AVOCADO JALAPEÑO SALSA! (Swipe for the salsa). Leftovers for the WIN! 🙃🙃 If you caught my stories last night, we had taco bowls for dinner. I make this salsa once a week because it’s my most requested from my boyfriend. (Good with shrimp or chicken or toast!) Made these babies for lunch today with the leftovers from last night. Added some tomato salsa to dip the roasted plantains in. I hope you had an amazing weekend. I took a little IG break. You may have seen I got in a car accident Saturday on our way to do a Spartan race, so the plans changed for the day. But everyone is ok so that’s all that matters ❤️ Had a fancy date night Saturday for my boyfriend’s birthday and relaxed and cooked a lot yesterday. How was your weekend? •⠀

Deets: Salsa: 2 ripe avocados chopped, 2 ripe mangos chopped, 1 cup chopped tomatoes, 1/3 cup chopped red onion, 1/3 cup cilantro chopped, juice from 1.5 limes, 1/2 jalapeño minced, 2 teaspoons coconut aminos, 1/2 teaspoon salt, 1/2 teaspoon pepper. Turkey: 1/2 onion chopped, 1/2 cup chopped mushrooms, 2 cloves garlic minced, 1 tomato chopped, 1/4 cup cilantro, 1 tablespoon cumin, 1 teaspoon paprika, 1 teaspoon chipotle powder, 1/2 teaspoon salt, pepper, 1 tablespoon lime juice, 2 teaspoons coconut aminos, one pound ground turkey. (Sauté veggies until soft in some oil, add turkey and cook, then add spices, aminos, cilantro and lime juice and let simmer.)
