Ingredients:
- 1 head cauliflower cut into bite sized pieces (roughly 4 cups)
- 2 Tbsp coconut oil, melted
- 1 Tbsp lemon juice
- 1 Tbsp curry powder
- ¼ tsp salt
Directions:
- Preheat the oven to 450F.
- Place all Roasted Curry Cauliflower ingredients in big bowl and toss to coat evenly.
- Spread the curry cauliflower evenly on a baking sheet and bake for 20 minutes.
