INGREDIENTS:
1 sheet of puff pastry
2 tbsp tomato puree
1 tbsp olive oil
1 tbsp balsamic vinegar Pinch salt
1 tsp black pepper
TOPPING:
Courgette
Cherry tomatoes
Kalamata olives
Capers
Sundried tomatoes
Red Onion
Soy milk for brushing
METHOD:
1.Lay the sheet of puff pastry onto a baking tray and cut into six squares. Then score a border onto the inside of the squares.
2.In a bowl, mix the tomato puree, oil, vinegar, salt and pepper to make a sauce. Then spread onto the inner of each square.
3.Put a few of each topping onto each of the squares.
4.Brush the puff pastry borders with soy milk.
5.Cook for 15-20 minutes at 180℃ (356℉), or until they begin to look golden brown.
6.Serve, they’re great hot or cold.
