The pulled pork recipe is a pork butt roast that is cooked in the crockpot. After it comes out of the crockpot, I shred the roast using two forks and spread it out over a foil covered sheet pan. Next, I cooked it on broil for a few minutes on each side. Cooking the meat on broil will give it some color and add additional flavor. It seriously makes all the difference when it comes to making good pulled pork at home. The pulled pork straight out of the crockpot is bland and tasteless. It’s boring and needs BBQ sauce to be edible. The cool thing about broiling the meat is that you really don’t need to add anything to the meat if you don’t want it, it already has lots of flavor. The star of this dish is the banana pudding though, don’t skip out on it. I used a sugar free instant pudding mix to be more macro friendly and sweetened it with a ripened banana. I mashed the banana until it was a smooth mush and stirred it into the pudding. To add some crunch, I included some gluten free Annie’s Bunny Graham’s. I would use vanilla wafers but I couldn’t find any gluten free ones. The banana pudding is okay to eat every once in a while and when you prep it, you can control your portion sizes. It’s not the healthiest food, but it’s not awful for you and it provides some variety to keep you excited for your lunches. .
