Safe to say I’m on a sweet potato kick this week 😅🍠. I was craving a big and buttery one tonight and it hit 👏🏻 the 👏🏻 spot 👏🏻. Paired it with pan-grilled BBQ shrimp and sautéed shrooms + spinach for a quick and easy post-run refuel 💯👌🏻🥰.⠀
whatsonmyplate: pan-grilled BBQ shrimp 🍤 (season shrimp with @primalpalate barbecue seasoning; in a pan, heat 1 tablespoon olive or avocado oil for one minute; add shrimp and sauté for 3-4 minutes on each side) •• baked sweet potato with vanilla bean ghee (this combo is 🥰)•• sautéed spinach with cremini mushrooms, red pepper, and parmesan cheese.⠀
