RECIPE by @bosh.tv
1T olive oil
1 chopped white onion
60g (3oz) tomato purée
1tsp chilli flakes
1tsp ground cardamom
1tsp smoked paprika powder
1tsp black pepper
3 chopped medium carrots
1 liter (2C) vegetable stock
160g (5oz) red lentils
1tsp cornflour dissolved in 1 tsp water
1 tsp salt
lime juice from 1 lime
1 tsp sumac
140g (6oz) fresh kale
In a pan, add olive oils and onion, sauté until soft. Add tomato purée, chilli flakes, cardamom, smoked paprika powder and black pepper and combine. Add carrots and combine. Then add the vegetable stock and bring to a boil. Add the lentils.
Add the cornflour, stir and let simmer for 30 minutes. Add salt, lime juice and sumac and stir before adding in the kale. Cook until soft and serve in a bowl topped with more chilli flakes. For a more detailed recipe, check out @bosh.tv . ENJOY! ?
