Happy FRY-day! ARCTIC CHAR, CUCUMBER NOODLE CASHEW SALAD and crispy herbed mini taters. Recipes below. I picked up some of this fish on sale at Whole Foods and made some last night…so good. SO, having the leftovers today with this delicious cucumber noodle salad…why I haven’t been spiralizing cucumbers until now is beyond me, but this will be a summer repeat. Deets: Arctic char seasoned with @primalpalate and seared in coconut oil (3 minutes skin side up in cast iron then transfer pan to oven preheated at 450 for another 3-4 minutes), mini fingerling potatoes cut I half seasoned with garlic powder, salt and dried thyme and tossed in coconut oil then roasted on 450 for about 20-25 minutes, spiralized cucumber with shredded carrots and roasted cashews in this dressing: 2 tablespoons coconut water, 1 tablespoon coconut aminos, 1 tablespoon tamari soy sauce or liquid aminos, 1/2 teaspoon garlic powder and 1/2 teaspoon honey. •
