This recipe is originally written to be served with the avocado pesto zoodles like on the left side. Swapping the Zoodles for rice is a way to manipulate the macros in a different way to fit whatever your needs may be. I know some of you prefer to keep your fat intake on the lower end. Using rice instead of the pesto covered Zoodles will obviously lead to less fat. The rice dish has 1 cup of rice in this image for reference purposes. .

Let’s talk about the carrots here for a second. I shit on vegetables all the time and talk about how gross they are but I eat them because they are good for you. These carrots are by far the best vegetables I have ever made. I roast them in the oven at 425F and cooking until they are done. The roasting brings out the natural sweetness in the carrots and makes it taste nothing like a vegetable should. Maybe it tastes good because it’s roasted in oil. Maybe it tastes good because carrots might not be gross (probably not). But who cares because anyway to make vegetables palatable is a win in my book. .
