Tuesday made better with these CRISPY HERB and PAPRIKA SKILLET RED BLISS POTATO “CHIPS” with roasted GARLIC! This is kinda like nachos, but even better IMO. Easy and delicious…the cast iron makes the difference! Made these with @fourthandheart Himalayan salt ghee, but they’d also be delicious with their garlic ghee. Throw some eggs and greens on top and it’s a winner. Also, they make perfect leftovers/meal prep…because potatoes are a good pairing for just about anything. Happy Tuesday loves! Deets: About 1 cup mini red bliss potatoes sliced thinly (about 1/4-1/3 inch thick), 3 cloves of garlic whole, tossed with 1.5 teaspoons @fourthandheart Himalayan salt ghee, 1/2 teaspoon paprika, 2 tablespoons fresh rosemary and parsley, and pepper to taste. Roast in cast iron on 400 for about 15 minutes or until crispy to your liking (shaking the pan around a few times) to make sure all sides cook evenly. Remove from oven, top with some greens, fried eggs, tomatoes, toasted like nuts and some avocado. Optional: dip the potatoes in the egg.
