Chipotle chili chickpeas tossed together with poblano peppers, adobo flavored rice, broccoli and guacamole. 💛⠀

1 can of chickpeas, rinsed and drained⠀
1 tsp chipotle pepper flakes⠀
1/2 tsp garlic⠀
1/2 tsp onion powder⠀
1 poblano pepper, cut into strips⠀
1 cup mushrooms, quartered⠀
1/2 tsp cumin⠀
1/4 tsp coriander⠀
1/4 tsp turmeric⠀
1 tbsp soy sauce⠀
1/4 cup water 💧⠀

Instructions⠀
Add mushrooms to a pan and sauté until mushrooms have softened and slightly browned. Add chickpeas and all seasonings to the mix. Stir to combine and allow to cook until fragrant, 2-3 minutes. Add soy sauce and water and stir to combine. Bring to a simmer and allow liquid to cook off slowly, about 5-8 minutes. Adjust seasonings as desired. 🌱
