The Beef Barbacoa Bowls are made from chuck roast and cooked in a crockpot to make for easy cooking. The beef comes out full of flavor and I love it to be served with a side of pico de Gallo. The vegetables are a mixture of zucchini and corn tossed in some paprika and chili powder and topped with cojita cheese. Mix it into the meat or eat it separately, it will be great both ways 👍👍

The chicken wings in the second meal are baked. A lot of people associate chicken wings with unhealthy but they don’t have to be. You don’t need to bread them or fry them, just put them in the oven and toss with Buffalo sauce. Buffalo sauce is amazing because it’s just vinegar and spices meaning it’s almost no calories. Served with the wings are roasted potato wedges, another food that may be associated with unhealthy eating. Potatoes don’t have to be unhealthy either, just make sure you portion them correctly. I love potatoes because they are super filling and I usually struggle with feeling full after meals. The ranch sauce in this meal is plain Greek yogurt with ranch dressing seasoning mixed in. This is a great, lower calorie option for ranch dressing!

All of you keto dieters can modify these to make them better for you. In the first one remove the corn and some of the vegetables and in the second omit the potatoes. .
