INGREDIENTS – LOSS(GAIN IN PARENTHESES) makes 4 servings. ⁣
10(8)eggs⁣
1(1.5) lb Yukon gold potatoes ⁣
1/2 onion⁣
3(2) bell peppers ⁣
4(12)oz chorizo ⁣
1 tbsp olive oil ⁣
Salt and pepper to taste ⁣

PREPARATION⁣
1. Preheat oven to 425F⁣
2. Cut potatoes into a medium dice. ⁣
3. Add to a sheet pan with half Tbsp of olive oil and sprinkle with salt and pepper. Roast for 10 minutes and then flip. Cook an additional 8-10 minutes. ⁣
4. Chop your onion and peppers into a medium dice. Sauté in the remaining olive oil until softened. ⁣
5. Cook the chorizo and scrambled eggs. Don’t over cook your eggs like a dummy. ⁣
6. Divide ingredients evenly 4 ways. Nutrition information in the picture is clearly for one serving, not 4. ⁣

❓Can I use regular potatoes?⁣
❗️Yes. It doesn’t matter. You can use any kind of potato. ⁣

❓It’s better if you cook the eggs in the chorizo. ⁣
❗️Everything is better if you cook it in chorizo. Everything also turns the color of chorizo when you cook stuff in it and that wouldn’t be very photogenic. Plus you want to make sure your eggs are properly cooked and cooking them with the meat doesn’t allow them to set up the same way. You can mix it together before you eat it. ⁣

❓Meal prepped eggs are questionable to me. ⁣
❗️Well then don’t make them. Or make them fresh every morning. Or cook them properly and don’t destroy them and they will be fine. Meal prepped scrambled eggs are finished cooking when they are still a bit wet. Don’t cook them all the way through. ⁣

❓I don’t like eggs what can I replace them with?⁣
❓100% serious and genuine question: how can you not figure this out on your own? I don’t know what you like. It’s just a couple of scrambled eggs just take them out. If you don’t like eggs I’m sure you’ve faced this problem at another point in your life. Do whatever you did then. ⁣
