Waffle Thursday! That’s a thing right ? 5 INGREDIENT PALEO SWEET POTATO WAFFLES with Salmon and Eggs! I just did a salmon tutorial in my stories if you’re interested. I haven’t made these waffles in so long and I made a batch yesterday. They freeze well if you make a bunch ahead of time and you can top them sweet or savory! Here, I drizzled with some tahini, honey and dill. They are also good cold as a snack topped with nut butter or yogurt and berries …just sayin ? hows everyone doing? Any good plans this weekend? It’s going to be 70 here on Saturday!

Deets: pan seared Wild salmon from @thrivemarket (see stories for tutorial), @vitalfarms soft boiled egg (see highlights for tutorial), asparagus sautéed and seasoned with umami seasoning from Trader Joe’s. Sweet potato waffles topped with @beekeepers_naturals honey, hemp seeds, dill and @woodstockfoods tahini. Waffles: 1 medium sweet potato (about 150 grams) peeled, chopped and steamed…blend the sweet potato with 1 egg, 2 whites, 3 tablespoons coconut flour (I get mine at @thrivemarket…see highlights), 1 tablespoon ground flax, a pinch of baking soda and salt…add cinnamon for sweet. Blend ingredients and cook according to waffle maker. •
