VEGAN NACHOS using potatoes from @fivesechealth ~ tapioca flour is the same as tapioca starch and should be found in any health store ?⠀
RECIPE (2 ppl):⠀
* 400 grams yellow potatoes⠀
For the cheese sauce⠀
* 1/4 cup cashews, soaked⠀
* 1/2 cup plant milk (I used soy milk)⠀
* 2 tbsp nutritional yeast⠀
* 1 1/2 tbsp tapioca flour⠀
* 1 tsp lemon juice⠀
* 1/2 tsp sea salt⠀
* 1/4 tsp onion powder⠀
* 1/4 tsp turmeric, ground⠀
For the beans⠀
* 400 grams crushed tomatoes⠀
* 220 grams black beans, drained⠀
* 1 tbsp cumin⠀
* 1 tbsp chili powder⠀
* 1/2 tsp sea salt⠀
For the topping⠀
* 1/2 red onion⠀
* 1/2 cup coriander (cilantro)⠀
* 1/2 cup korn kernels⠀
* 1/2 cup coconut yogurt⠀
Steps⠀
1. Preheat the oven to 200C/392F and boil the cashew nuts in water for 10 minutes⠀
2. Wash and thinly slice the potatoes, put the slices on a baking pan covered in parchment paper, let them bake for 15-20 minutes or until soft and brownish on the outside⠀
3. Make the cheese sauce by combining all of these ingredients in a blender (or use a handmixer), and blend until smooth⠀
4. Transfer the cheese sauce to a saucepan on medium heat⠀
5. Whisk the cheese sauce frequently until it thickens, don’t let it thicken too much (see video), set aside⠀
6. Don’t forget to check your potatoes!⠀
7. Now make the beans by combining all of those ingredients in a pan, let it simmer for 5 minutes, set aside⠀
8. When the potatoes and beans are done, it’s time to assemble!⠀
9. Place a layer of potato chips on one or two plates, then add an unevenly layer of beans, then the onion, korn, cilantro and lastly the cheese sauce and coconut yogrt!
