Tofu Tikka Masala ? A tasty and tummy-warming dinner!⠀

Marinated Tofu:⠀⠀
1 block (400g) extra firm tofu, pressed and cubed⠀⠀
1/2 cup yogurt or full-fat coconut milk⠀⠀
1 tsp each: ground coriander, cumin, garam masala, turmeric, paprika⠀⠀
1/2 tsp sea salt⠀⠀
Combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.⠀⠀
1 large onion, diced (250g)⠀⠀
5 cloves garlic, minced⠀⠀
2 tbsp ginger, minced⠀⠀
1/2 tsp cinnamon⠀⠀
1/2 tsp coriander⠀⠀
1 tsp garam masala⠀⠀
2 tsp curry powder⠀⠀
1 tsp red chili flakes⠀⠀
1/2 tsp sea salt⠀⠀
2 large ripe tomatoes, pureed (400g)⠀⠀
1 cup full-fat coconut milk⠀⠀
3-4 cups chopped veggies — I used zucchini⠀⠀
1 tsp maple syrup⠀⠀
In a large pot, sauté the onion, garlic, and ginger with oil/water. After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well, then mix in veggies and marinated tofu. Cover and simmer on low heat; once veggies are almost tender, about 8 min, stir in coconut milk and maple syrup, and cook for another 5 minutes. Serve warm. Enjoy!
