Toasting to Tuesday with the SAVORY TRIO…avocado, Mediterranean shrimp, and POACHED scrambled eggs! Happy Tuesday loves. Made these toasts last week to share with my Web Master while we were doing some cookbook work. I used the keto bread from @baseculture which is BOMB. I’m obsessed with their products…the nut butter and the brownies are amazing. Decided to keep the theme and topped these babies with keto friendly toppings. Also, if you’ve never tried poaching scrambled eggs you need to do it! I used a method I found on Food52. I’ll link in my stories, but it is super easy and the result is so so fluffy! I’ve been running around since 5 AM and just had my second cup of coffee…one of those days 🙈 Which one would you choose?



1️⃣ Avocado, tahini, sunflower seeds and red pepper flakes.
2️⃣ hummus, tomatoes, cucumber, dill and shrimp marinated in olive juice, garlic and lemon zest and quickly sautéed, olives and dill.
3️⃣ avocado and poached scrambled eggs (drain the liquid part from egg whites through and strainer, beat the eggs, bring water and salt to a boil, reduce heat to medium low, create a whirlpool, pour eggs in and count to 20. Pour water off and strain the eggs in a strainer.)
