Happy FRIDAY!!!! This TANDOORI plant bowl was a game changer. Made this for dinner the other night and it was so delicious! I rarely think to buy tofu, and I really should because I always forget how much flavor it absorbs! I seasoned it and roasted it for 25 minutes. Super easy. This was the Roasted Tandoori Tofu Bowl from @purplecarrotxo. Filled with quinoa with apricots and shallots, sautéed green beans with cilantro chutney and roasted tandoori tofu. All of their meals are plant-based, which I love. Plus they are super easy to make with all the ingredients fresh and included.
