Passover Pizza for Lunch: slow roasted heirloom tomatoes 🍅 mushrooms, vegan mozz @miyokos_kitchen fresh basil with a balsamic glaze drizzle on an unleavened crust.
•I usually make matzah pizza over Passover (using matzah for the crust). This year I wanted something more substantial that wouldn’t get soggy, fall apart, and be able to hold all the toppings. The combo of potato starch and almond flour did the trick 🙌🏼
