?Indian spiced chickpea sweet potato stew(swipe for ingredients)
?Another flexible recipe. Use frozen veggies if preferred and almost any beans will work. ✅Recipe: Sauté 1/2 small finely chopped onion (red, yellow or white) in a little olive oil or broth until translucent, about 5 minutes. ✅Add 2 minced garlic cloves and sauté another minute. ✅Add 1/4 tsp garam masala, 1/4 tsp ground coriander, 1/2 tsp ground cumin, 1/2 tsp turmeric, 1 tsp curry powder and cook another 30 seconds until fragrant. ✅Add 1 small/medium sweet potato, peeled and chopped into about 1-inch pieces (or sub with 5oz frozen butternut squash), 1-15oz can chickpeas (rinsed and drained), about 2 cups chopped kale (or 5oz frozen kale), 1-15oz can diced tomatoes, 1 cup veggie broth. ✅Bring to a boil before reducing heat. ✅Simmer covered until sweet potato is just fork tender. (Add more broth as needed.)✅Salt to taste. .
