Grilled Chicken Sandwiches. How sad is if that summer is quickly coming to an end? If you want a nice summer grilling meal before school starts or a welcome back to college grill out these would be a great choice.

The waffles are included because gluten free waffles are 1/2 the price of gluten free buns. If you don’t care about gluten free breads just use a regular bun, slap some butter on it and throw it on a pan. A nice bagel bun would be wonderful with these if you can find them. ⁣

INGREDIENTS ⁣⁣
5 -4oz chicken thighs ⁣⁣
4 tsp Dijon mustard ⁣⁣
2 tsp soy sauce ⁣⁣
1 tsp garlic powder ⁣⁣
2-3 tbsp lemon juice ⁣⁣
1 tbsp olive oil⁣⁣
⁣⁣
3oz arugula ⁣⁣
1 tbsp olive oil⁣⁣
1 tbsp honey ⁣⁣
Lemon juice to taste ⁣⁣
1/4 cup feta cheese ⁣⁣
Salt ⁣⁣
⁣⁣
3 tbsp mayo⁣⁣
2 tbsp dill relish ⁣⁣
Lemon juice to taste ⁣⁣
⁣⁣
10 waffles/5 buns ⁣⁣
1 large tomato⁣⁣
⁣⁣
PREP⁣⁣
1. In a bowl mix together the chicken marinade. Stir and adjust flavor as preferred. Add chicken & marinade at room temp for 30 minutes. Start your grill.⁣⁣
2. Mix together the arugula, oil, lemon, honey and feta. Adjust flavor as needed. ⁣⁣
3. Mix together the mayo, relish, and lemon juice. Pepper to taste. ⁣⁣
4. Cut tomato⁣⁣
5. Toast the waffles/buns. ⁣⁣
6. Spread a layer of the mayo on each bun. Top with chicken, tomato, and salad mix. ⁣⁣
7. Makes 5 sandwiches, nutritional info is for each one.⁣⁣
