This combo makes an EXCELLENT start, or snack idea for your busy day!⠀

makes 2 servings ⠀
Ingredients:⠀
4 hard boiled eggs, peeled and grated/diced small ⠀
1/4 cup crumbled cheese (optional)⠀
1 ripe avocado⠀
1/4 tsp ground cumin ⠀
1 Tbsp fresh lime juice⠀
1 cup quartered fresh cherry tomatoes⠀
4 slices of rye or Ezekiel bread, lightly toasted ⠀
sea salt and freshly ground black pepper⠀
⠀
Instructions:⠀
In a small bowl smash the avocado with the back of a fork. Season with sea salt, pepper, and add in cumin and lime juice. Stir well to combine.⠀
Spread the avocado mixture equally over slices of bread, then top with grated eggs, crumbled cheese and cherry tomatoes. Season with a pinch of sea salt and freshly ground black pepper. Enjoy!
