Gluten Free Chocolate Chip Banana Bread Muffins.
If you decide to make these I suggest making them just before bed and letting them sit overnight because for whatever reason, they are better the next day. You could swap the chocolate chips for blueberries if you wish and it would cut out roughly 140 calories.
Here’s how to make them.
1 cup (80g) oats
2/3 cup (150g) plain Greek yogurt
2 ripe (250g) bananas
1 scoop (30g) whey
1 tsp (4mL) vanilla
1 tsp (4g) baking powder
1 tsp (4g) stevia
2 tbsp (30g) dark chocolate chips
1. Preheat your oven to 350F.
2. In a blender, add the oats and pulverize into a flour. Add in the remainder of the ingredients minus the chocolate chips and blend until smooth.
3. Spray a muffin tin with cooking spray and fill the wells half way with the batter. It will make 9-10 Muffins.
4. Top each with some dark chocolate chips.
5. Bake for 20-22 minutes.
6. The Muffins will be better after they sit overnight.
❓I’m allergic to bananas, what can I swap them for?
❗️These are literally called Banana Bread Muffins. It is the primary ingredient in the recipe. Just make regular muffins.
❓Can I use frozen bananas?
❗️Frozen and then thawed bananas are actually preferred because they tend to be sweeter and more liquidy.
