Gluten Free Balsamic Chicken Flatbreads. Here is another easier way to incorporate some greens into your diet that is not through a salad.

INGREDIENTS (Makes ~3-4)⁣⁣
1/2lb grilled chicken breast⁣⁣
1 Tbsp hummus for each⁣⁣
1 cup of grape tomatoes⁣⁣
1 small cucumber ⁣⁣
2 cups arugula ⁣⁣
1/2 red onion⁣⁣
2-3 Tbsp balsamic vinegar ⁣⁣
Feta cheese⁣⁣
⁣⁣
For the flatbread⁣⁣
1/2 cup GF flour ⁣⁣
1/4-1/3 cup plain Greek yogurt ⁣⁣
1 tsp baking powder .⁣⁣
⁣⁣
PREP⁣⁣
1. Mix the flour, Greek yogurt, and baking powder until it forms a dough. I start with roughly a 2:1 ratio of flour to yogurt and then add more of whatever ingredient i feel is necessary. The dough should be almost the consistency of playdoh. I’ve tried different types of flours and the ratio will change for each one. Anything works. Just use your best judgement.⁣⁣
2. separate dough into smaller balls and roll to about 1/8” thick using wax paper. It should make about 3 flatbreads. Put it on an oiled cast iron grill pan for a few minutes each side. ⁣⁣
3. For the toppings, chop your tomatoes, cucumber, and red onion into thin slices. Mix in a large bowl with the arugula and balsamic vinegar. Allow it to marinate for a few minutes so the flavors come together. ⁣⁣
4. To construct, add around 1 Tbsp of hummus to the flatbread, top with chicken and then put a handful of the salad mix over the top.⁣⁣
5. If you need precise macro and calorie information i would calculate for yourself. The estimate shown here will be close but because of the variability in making the flatbread and customization that can occur when constructing your flatbread id calculate yourself. ⁣⁣

I meant to include a clip for grilling the flatbreads but I filmed this over 9 months ago and just got around to editing it last night and now I can’t find that video. All you do is slap it on a cast iron grill and turn it when it’s ready. Very easy. You don’t have to use a grill pan obviously but you know what I always say about grill marks. Cool people make food with grill marks. If you need the nutritional information just calculate it yourself. There’s too much variability in these to give an accurate value. Go by feel.
