Garlicky cashew parmesan roasted potatoes?

If you are looking for a simple snack today, try this roasted potatoes topped with @pimp.my.salad cashew parmesan. They are finger licking good and kids’ approved!?

Recipe
Ingredients:
~ 1 lb baby potatoes, scrubbed and wedged or halved
~ 1/2 bell pepper (optional)
~ 1 tbsp AP flour
~ 1 tsp ancho chili pepper
~ 1 tbsp garlic powder
~ dash of salt and black pepper
~ 1 tbsp oil + oil to grease pan

Wash and clean potatoes well, cut into wedges or halves and soak in cold water for 10 mins to remove starch. Pat dry and rub potatoes with 1 tbsp avocado oil. Preheat oven to 450F.
Whisk flour, ancho, garlic powder, salt and pepper in a small bowl. Add this mixture to potatoes and toss well. On a greased baking sheet pan, lay potato wedges skin side down and bake for 30-35mins until golden brown. Remove from oven and sprinkle with cashew parmesan cheese. Serve immediately with a side of spicy mustard and ? cream.

~Spicy mustard – simply add 3 tsp of Sriracha to 4 tbsp of mustard, mix well. ~? cream: mash one avocado with 2 tsp nutritional yeast, squeeze of lime juice, dash of salt and topped with chili flakes.
