Frango Assado. When I lived in São Paulo I used to eat this meal almost every night. It’s cheap, flavorful, and quite simple
INGREDIENTS
FOR THE CHICKEN
10 (2.5lbs) chicken legs
Juice of one lime
2 tsp chili powder
2 tsp oregano
6 tsp cumin
1 tsp paprika
1 tsp salt
FOR THE BEANS
2 cans (28oz) pinto beans
1/2 onion
1 tbsp garlic
1/2 tbsp olive oil
2/3 cup chicken broth
2 tsp basil
2 tsp paprika
Salt and pepper to taste
FOR THE RICE
1 cup dry rice
1/2 onion
1 tbsp garlic
1/2 tbsp olive oil
2 cups water
Salt and pepper to taste
FOR THE FAROFA
3 tbsp cornmeal
1/2 tbsp olive oil
Salt and pepper to taste
2 tomatoes
PREP
1. Mix all of the chicken spiced and lime juice in a bag. Add chicken. Marinate at least 1 hour. Bake at 400F for 20-22 min.
2. Dice onion and mince garlic.
3. Add oil to a pan and add 1/2 onion and 1 tbsp of garlic. Cook until onion is translucent.
4. Add dry rice and allow to brown a bit. Add water, bring to a boil and reduce to simmer. Cover for 20 minutes. Salt and pepper to taste.
5. In another pan add oil and sauté other half of onion and 1 tbsp of garlic until translucent. Add in 1/4 of beans and mash.
6. Pour in broth and remaining beans. Allow them to thicken and add the seasonings.
7. For the Farofa, add oil to a skillet and mix in cornmeal. Cook until it has toasted. Salt and pepper.
8. Makes 5 servings. Divide ingredients evenly. Nutrition information is for each serving.
❓What is Farofa?
❗️It’s supposed to be made with cassava but I couldn’t find any. It’s used for flavor and texture. You can leave it out but it is very much a Brazilian trademark.
❓689 calories? That’s way too many.
❗️Yes it’s more than many of my other meals but it’s also still way less than what a lot of you are eating per meal. Your restaurant lunches are probably 700-1000 calories easily. Ideally the serving of rice and beans would be smaller but this was the easiest way to have round numbers and prevent waste.
❓Can I use chicken breast?
❗️Obviously. Just make sure you score the meat up a bit so the marinade can penetrate it.
