FLUFFY AND CREAMY CHAI SPICED EGG WHITE OATS! (Vegan option) Been on a huge oatmeal kick lately, and I don’t see it changing any time soon. I’ve been experimenting with a ton of flavors, and this one is definitely in my top 3. I love adding egg whites to my oats to add sone protein, but also because it makes them super fluffy and adds lots of volume. The chai flavor is warming and yummy, and I add maca powder from @mrm_nutrition for some added nutrients and sweetness. Maca has a slight caramel flavor and it’s a staple of mine in oats. Deets: (makes 2 servings…for single serve make half) 1 cup gluten free old fashioned oats, 2 cups water, 1/2 cup applesauce (or mashed banana), 1/2 teaspoon salt, 1.5 teaspoon vanilla, 2 teaspoon @mrm_nutrition maca powder, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon ginger, 1/4 teaspoon cardamom, 1/4 teaspoon @mrm_nutrition turmeric, pinch of allspice. (OPTIONAL: maple syrup or sweetener of choice). Bring water and salt to a boil, then add all other ingredients and reduce heat to medium low. Cook for about 7 minutes until *most of the liquid has been absorbed. I stir every couple minutes. Turn of heat and while whisking, add 4 egg whites. Continue to whisk vigorously until the oats are fluffy and egg white is mixed in/cooked (about 1-2 minutes) Topped with thinly sliced sautéed cinnamon apples, pecan, blueberries and nut butter. **To make vegan omit the egg whites and cook a couple more minutes until liquid is absorbed. •
