Here is my opinion on egg whites vs whole eggs. I believe we should be eating whole eggs the majority of the time. However, there are a few situations where egg whites are preferred. 1) When you need a source of high quality protein while limiting calories. 2) if you prefer the taste and get enough vitamins and minerals from other sources 3) You want more volume for less calories. The white of the egg is called the albumin and is super versatile in cooking. You can whip air into them and use them in baking or give you a bread like consistency. The egg whites lack the nutrients of the yolk but if you are getting them from other foods, you are golden. .
Whole eggs have beneficial nutrients like vitamin D, A, choline, and cholesterol. The myth that eggs are bad because they have cholesterol in them needs to die. We have study upon study now that shows dietary cholesterol has little to no impact on blood cholesterol levels. Our body can regulate our cholesterol levels and if we eat more, we will produce less. Cholesterol is in every cell of your body. It is used to produce sex hormones and vitamin D. Without it you would struggle. What we know about cholesterol now is different than what we did 10 years ago. Taking bets now on how many vegans will comment on this post to complain. The over/under is at 2.5. PLACE YOUR BETS DUDES!! In my opinion, pastured eggs are likely best for health and humanity. Support your local farmers and try to buy from them if you can!
