Crunchy beans Hakka stir-fry with spiced tofu? (La Jiao Xiao Chao ‘辣椒小炒’). Super simple and easy to make for a quick dinner dish. My mom loves to blanch the beans quickly in hot water before stir-frying to keep the vibrant green & crunch intact.??Stir-fry is one of the cooking methods we used a lot at home especially during cooler weather. Recipe (yields 2-3 servings)
?Ingredients:
~ 1 lb French beans, sliced diagonally
~ 4 oz *spiced tofu, sliced thinly
~ 3 Thai chilies
~ 2 cloves garlic, sliced
~ oil
~ salt to taste
Sauce:
~ 1 tablespoon soy sauce/tamari
~ 1 tablespoon mushrooms stir fry sauce (see highlights for homemade recipe)
~ 1 tablespoon Chinese cooking wine (Shaoxing)
~ a dash of white pepper
✅Blanch cut beans in hot boiling water, drain well, then rinse with cold water/ice water to stop the cooking process.
✅To make the stir-fry, sauté garlic with 1 teaspoon oil in a wok or non-stick pan until fragrant. Then, stir in tofu, Thai chilies & continue to cook for 1-2 minutes. Add in French beans and toss with sauce until well combined. Serve warm with a bowl of rice.
*seasoned pan fried firm tofu can be substituted for spiced tofu
