Happy FRY DAY!! Testing out some super bowl recipes and these CRISPY CAJUN POTATOES and TURMERIC CASHEW DIP are sure to be on the menu. Paired with some CILANTRO LIME SHRIMP for lunch today. Hope you’ve all had a fantastic week! I’m pretty pumped for Super Bowl since my team is playing ? gopats (Please don’t hate ?) I’m pretty happy it’s Friday anyway, looking forward to the weekend with a fun day tomorrow. What are you doing for the Super Bowl? OR, what are you MAKING I should ask! ⠀
Deets: kale, crispy fingerling potatoes cut in half and brushed with coconut oil and seasoned with Cajun seasoning and baked on 425 for about 25-30 mins. Watermelon radish, avocado with chia seeds, wild shrimp boiled in water with lemon and herbs then tossed with a mixture of olive oil, cilantro, lime juice and salt. For the dip: I used the cashew Spread I posted yesterday and added turmeric and more lemon juice.
