?Blood Orange Cardamom Cheese Cake?
The cardamom and blood orange juice really complement each other in this vegan cashew cheese cake. (Just my humble opinion.) Is it weird to wake up on a Saturday excited to make another cheesecake? (This one’s for my lovely neighbor who’s pregnant and so can afford an extra cheesecake or two.?)
?Recipe:
Crust
1/2 c oats, 1/2 c almonds, 1/2 c dates, 1/2 Tbsp carob powder, 1/4 tsp vanilla, 1tsp macadamia oil. Process until sticky. Then mold with hands and press into mini tart case. Freeze for at least 3 hours.
Blood Orange Cardamom layer
Blend 2 c cashews (soaked in water overnight and rinsed) + 3 dates (pitted +chopped) 1/2c fresh blood orange juice + 1/8-1/4 tsp ground cardamom + 1/2 tsp vanilla + 1/4 c plant milk. (You can add 1 Tbsp maple syrup to this if you like.) Top tart with this cream and refrigerate for at least an hour or so until set. ?Inspired by the wonderful creations of @healthyeating_jo @datesandavocados @rainbowplantlife .
