Thank COD it is TUESDAY! It was a HASSLE this morning when I thought it was Wednesday ? Wishing I had this bowl from a while back of crispy fingerlings and this CHILI LIME roasted cod…paired with some cilantro lime hummus. ? I just made a taco bowl with some leftovers, but a girl can dream of a second lunch right?! I have been running around getting errands done this morning, trying to prep work stuff before taking off for Expo next week. Got a late start today ? So I’m making up for it now. Tutorial for the potatoes is in my highlights. Happy Tuesday loves!



Deets: chili lime roasted cod (brush cod with olive oil and coconut aminos and generously season with @traderjoes chili lime seasoning. Squeeze a little lime over top and bake on 400 for about 10 mins). Paired with roasted tomatoes, roasted asparagus, hassleback fingerling potatoes and cilantro lime hummus. Hummus: one can chickepeas (I remove outer layer with a paper towel), 3 tablespoons tahini, 3 tablespoons olive oil, 1/2 Cup cilantro, 1/2 teaspoon salt, 1/2 teaspoon red pepper flakes, 2 tablespoons lime juice, 3 tablespoons water. Blend until smooth in food processor and add water if you want it thinner. •
