Sweet potato chili! With quinoa corn salad 😋 The easy recipe is below! Have a great night friends! 🎉

Saute 1 onion and several garlic cloves in oil for a few minutes. Add 1 T chili powder, 1 T cumin, 2 teaspoons oregano, 1 T tomato paste, 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika, the cook for a few minutes. Add 2 sweet potatoes diced, 1 28 oz can diced tomatoes, and just enough vegetable broth to cover. Bring to boil then cook on low simmer covered for about 15 minutes. Add 1 can of beans and 1 cup frozen corn, and add additional broth if needed over the course of next 45 min. Add 1 teaspoon kosher salt and taste for seasoning. Top with green onion and fresh cilantro. 👍

For quinoa salad, mix about 2 cups cooked quinoa with 1/2 cups cooked corn. Make dressing by whisking juice of 1 lemon, dash of white wine vinegar, and a couple tablespoons olive oil. Add salt and pepper to taste. Toss dressing with quinoa and corn. Top with green onion! 🔥🌱
