Zucchini walnut bread – who wants a slice??

Happy Sunday, everyone?! Hope your day is going well for you. If you have zucchini, super ripe ? & some nuts, preferably walnut, then, this recipe is for you!? My first loaf was not insta-worthy, too dense but super delicious! With a little adjustments to the ingredients, voilà ✨, fluffy and soft bread for you to try.?

Recipe
Dry Ingredients:
~ 1 1/2 cups all purpose flour
~ 2 tablespoons cold @miyokoscreamery butter
~ 1 teaspoon baking powder
~ 1/2 teaspoon baking soda
~ 1/4 cup toasted walnuts, chopped
~ dash of cinnamon
Wet ingredients
~ 1 medium zucchini, shredded (about 1 1/4 cups)
~ 1 super ripe banana, mashed
~ 1/2 cups coconut sugar
~ 1/2 cups pure cane sugar
~ 2 teaspoons vanilla extract

Whisk together flour, baking powder and baking soda in a bowl until well combined. Using your fingers, slowly massage cold butter to the flour (very meditating) until it looks coarsely ground, set aside.
Squeeze as much liquid out as possible from the zucchini, set aside. In a mixing bowl, mash banana and add in all sugars, vanilla extract, and stir until well combined.
Add flour mixture to wet ingredients, mix until you see no big lumps (your batter should be very thick). Then, fold in zucchini, do not over mix.
Preheat oven to 350F, and line a parchment paper on a loaf pan (used the smallest pan 3’X7’X2′), pour half the mixture in and layer with walnuts, then top with the remaining mixture, smooth top with your finger.
Bake for 50 minutes to 1 hour until toothpick comes out clean. It took me 55 minutes with my oven. Let cool in the pan for 5 minutes before transferring to a cooling rack.
Enjoy it with fig butter or butter and your favorite drink.☺️
