You know I love a good TOAST TUESDAY! Meal prepped some of these sweet potatoes on Sunday, making my busy day today a little bit easier 👌Also made some of this cashew coconut cream using leftover cashew pulp from my @almondcow! Meetings, recipes and emails all day then making my way to go vote. I also need to prep for an event this weekend…I’m catering a party of 50 🙈 How’s your Tuesday going? •


Deets: 3 sweet potato toasts (cut 1/3 inch thick and baked on 400 for 30 minutes) 1. Homemade coconut cashew cream (blend together 1/2 cup cashew pulp not drained OR 1/2 cup cashews soaked overnight, 1 cup coconut milk—-refrigerated for 24 hrs without the liquid, 1/2 teaspoon vanilla, 1 tablespoon coconut oil, 1/4 teaspoon salt), strawberries, blueberries, @lilys_sweets_chocolate melted and drizzled. 2. Avocado, hemp seeds, micro greens, @vitalfarms egg and bacon. 3. Homemade chocolate spread (recipe in highlights), banana, frozen raspberries, @wholeme cluster pieces and @georgiagrinders almond butter. •
