Tomato toast with garlicky tahini sauce because sometimes I don’t have the stomach for the more traditional tomato toast with mayo ?.

Tahini sauce: thin 1-2 Tbsp tahini with a splash of hot water. Stir in a small glug of olive oil, juice from half a lemon and a clove of crushed garlic. Salt and pepper to taste.

Assembly: fry up a thick slice of country bread in olive oil in a hot pan on medium heat until golden on both sides (2-3 minutes on each side). Remove from heat. Spread tahini sauce on toast, top with the ripest, juiciest tomatoes you can find at the farmer’s market, drizzle with olive oil, and most importantly, sprinkle generously with flaky sea salt. Eat!
