TOFU SCRAMBLE TACOS ✨ I’ve had these twice in the past week because they’re just that good. Surprisingly easy to make (I admit, my partner actually made these… thanks @aveclarke), super delicious and totally satisfying, these are on my weekly rotation for sure ??.
To make ??:
Start by grating two full carrots and placing in a bowl. Pour 2 tbsp of apple cider vinegar on top and let sit for duration of cooking to ‘quick pickle’. Meanwhile, sauté 1 diced yellow onion + 3 cloves of minced garlic until onion is translucent. Add in 1 chopped bell pepper, 1 block of crumbled extra firm tofu, 1 can of drained and rinsed black beans, 1/4 cup nutritional yeast, 1 tsp turmeric, 1 tsp cumin, 1 tsp chili powder, 1/4 tsp salt + black pepper. Cook together for ~10 minutes. Meanwhile, make a sunflower seed sour cream by blending 1/2 cup sunflower seeds, 3 tbsp apple cider vinegar, the juice of 1/2 lemon, 1/4 tsp salt and 1/4 cup water (plus more as needed). Serve all components together with corn tortillas (+ margaritas optional) and enjoy! ?
