Throwback WAFFLE WEDNESDAY: French Fry Edition ? RANCH SEASONED WAFFLE FRIES and GARLIC GHEE SCALLOPS! Happy HUMP DAY loves. I made a pit stop at Trader Joe’s yesterday and picked up some jumbo sea scallops. HIGHLY RECOMMEND! I am thinking this might be dinner tonight. I need to pull out my waffle fry cutter today and make some fries in the air fryer. They come out SO crispy. Served with some @lef_farms greens, salsa for dipping and some mini avocados. I’ve been in the kitchen all day! Snacking, shooting, repeat ? Hope you’re all having a fabulous day!



Deets: scallops (patted dry with paper towels: crucial if you want a good sear!) seasoned with salt and pepper. Heat up 1 tablespoon ghee and one clove sliced garlic over medium high, and add the scallops after about 1 minute. Sear for 2 minutes per side…tip: spread them out so that the juices don’t ruin that sear! Fries: 2 cups mini potatoes cut with my waffle fry cutter, tossed in coconut oil, seasoned with 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon dill seed, 1/2 teaspoon parsley, 1/4 teaspoon salt and 1/4 teaspoon pepper. Air fry for 10 minutes on 375 (shake every 3 minutes). •
