The easiest TEN MINUTE (one pot) MEAL: LINGUINE with GARLIC-BASIL CHERRY TOMATO SAUCE. Gluten free and vegan. Don’t get me wrong I love making a slow cooked tomato sauce, but this one I love because it’s light, easy and comes together in no time! I’ve been making this since college, and it’s always a hit! There is something about bursting cherry tomatoes that just gets me every time. •

Deets: saute 2 cloves garlic, 1/2 diced onion, in 2 teaspoons olive oil over medium high heat for 2 minutes until fragrant. Add 1 pint cherry or grape tomatoes and sauté for 2 more minutes, add 1/2 teaspoon salt, a few dashes pepper, dash coconut aminos, pinch of coconut sugar and continue to sauté until the tomatoes all burst. Add 1/2 cup basil and 2 tablespoons fresh chopped parsley and toss. Add 8 ounces of cooked pasta of choice and another drizzle of olive oil and toss until pasta is coated. Top with feta or any cheese/dairy free cheese of choice!
